The interior measures 29 inches wide by 26 inches deep by 20 inches tall that holds five racks per deck. Chrome plated, each rack withstands high-heat applications while adding strength. Users can adjust these in 1¹/₂-inch increments depending on what’s being cooked; the interior has 10 total rack positions. Because the oven cavities are deep depth, they can accommodate full-size sheet pans side to side or front to back.

For accessibility, the oven is fitted with double doors supplied with large handles, and once the doors are opened, they trip an interlock switch that turns off the fans and burners to protect employees. Behind the doors, the interior flaunts a porcelain enamel design that reduces the appearance of scratches and abrasions that come from intensive use. The exterior front, sides, and top are made of stainless steel for full-body strength, and this unit sits on a set of casters to ease transportation.

The MoTak MDCO-2-N double full-size convection oven displays a solid-state operational panel that can be used to set the temperature between 150 and 500 degrees Fahrenheit; meanwhile, users can adjust the timer as high as 60 minutes. It has manual on and off switches, and once on, it ignites the electric spark ignition to begin heating. When it reaches the pre-set conditions, this unit has a ready light that simplifies communication with the operator. This unit outputs at a total of 108,000 BTU.
